Description
These pancakes are an excellent source of dietary fiber and a delicious way to start any morning.
Ingredients
- 1 cup wheat berries
- 1 cup soy milk
- 1 cup applesauce, unsweetened
- 1⁄2 cup assorted ripe fruit, such as peach, pear, banana)
- 2 tsp baking powder
- 1 tsp vanilla extract
- 1 tbsp ground flax seeds
- 1⁄2 cup blueberries, optional
Instructions
Soak wheat berries in water overnight. Pour off water and rinse. Place in high-powered blender (Vitamix) and add all other ingredients except blueberries. Blend thoroughly. Add blueberries into blender and give a stir with a spoon. Cook pancakes in a nonstick pan with a light spray of canola oil. Cook over medium heat, about 3-4 minutes on the first side, and 1-2 minutes on the second side.
