Creamy Butternut Squash Soup

Description
A delicious pureed soup with hints of nutmeg and clove. Perfect for a fall or winter evening meal.
Ingredients
- 6 cup water
- 1 cn low sodium vegetable broth
- 2 cup soy milk
- 2 onions, chopped
- 6 carrots, chopped
- 5 celery stalks, coarsely chopped
- 2 medium zucchini, coarsely chopped
- 2 whole butternut squash, peeled, seeded, and cubed
- 3 tbsp Dr. Fuhrman's Vegi-Zest or other no-salt seasoning
- 1 tsp Spike or Mrs Dash seasoning, no-salt
- 1⁄2 tsp ground cloves
- 1 tsp nutmeg
- 1⁄2 to 1 lb fresh mushrooms, small size, cut in half
- 2 tsp ground cinnamon
Instructions
Place everything in soup pot except mushrooms. Boil and then simmer for 1/2 hour. Blend everything. Add mushrooms. Cook another 1/2 hour.
