Description
This blended salad is a full meal by itself. Perfect for a quick snack or lunch on-the-go!
Ingredients
- 1 romaine lettuce, large handful
- 1 spinach, large handful (may substitute collard greens, kale, bok choy, etc)
- 1 tomato, chopped
- 1 sweet red pepper, chopped
- 1⁄2 avocado, chopped
- 1 carrot, chopped
- 5 broccoli florets
- 1 orange, peeled (may substitute 1/2 pineapple for orange and apple)
- 1 apple, chopped
- 1 banana
- 4 medjool dates, chopped
- 1 handful walnuts, raw
- 1⁄2 cup pomegranate juice
- ice cubes, small handful
- Water as needed to adjust consistency
Instructions
Add all ingredients to a blender and blend for 1-2 minutes. With a conventional blender, it may be necessary to blend the ingredients in two or three batches and then mix together in a pitcher.
Notes
You can substitute 1/2 pineapple for the orange and apple.
