Description
This delicious salad is perfect on a hot summer day with fresh ripe tomatoes.
Ingredients
- 2 tbsp lemon juice
- 1 cup beans (red beans, black beans, etc)
- 2 cup tomatoes, finely chopped
- 1 cup fresh or frozen corn or peas
- 1 avocado, sliced
- 1⁄2 cup sweet red pepper, diced
- 1⁄4 cup celery, diced
- 4 scallions, trimmed and thinly sliced
- 1⁄2 cup cilantro, coarsely chopped
- 1 tbsp whole-grain mustard
- 1⁄2 tsp Sambal Oelek Chili Paste
- Pepper to taste
Instructions
Whisk together lemon juice and mustard in a large bowl. Add all remaining ingredients and gently toss to combine.
Notes
Consider using Westbrae No-Salt Stoneground Mustard.
