Description

This delicious salad is perfect on a hot summer day with fresh ripe tomatoes.

Ingredients

  • 2 tbsp lemon juice
  • 1 cup beans (red beans, black beans, etc)
  • 2 cup tomatoes, finely chopped
  • 1 cup fresh or frozen corn or peas
  • 1 avocado, sliced
  • 1⁄2 cup sweet red pepper, diced
  • 1⁄4 cup celery, diced
  • 4 scallions, trimmed and thinly sliced
  • 1⁄2 cup cilantro, coarsely chopped
  • 1 tbsp whole-grain mustard
  • 1⁄2 tsp Sambal Oelek Chili Paste
  • Pepper to taste

Instructions

Whisk together lemon juice and mustard in a large bowl. Add all remaining ingredients and gently toss to combine.

Notes

Consider using Westbrae No-Salt Stoneground Mustard.
