Description

A lively salsa for any occasion. Use up some fresh tomatoes from the garden.

Ingredients

  • 1 cup fresh or frozen corn or peas, thawed
  • 2 cup tomatoes, diced
  • 2 tbsp red onion, diced
  • 1⁄4 cup yellow bell pepper, diced
  • 1 tbsp fresh cilantro, chopped
  • 1⁄4 tsp Sambal Oelek Chili Paste to taste
  • 1 1⁄2 tbsp fresh lime juice

Instructions

Thaw corn if necessary. In a large bowl, combine all ingredients and set aside for 15 to 20 minutes to allow flavors to develop. You may add 1/2 cup cooked black beans to add protein to this salsa.
